From the moment you arrive, the setting takes centre stage. A torchlit pathway winds through the sand, leading to an intimate venue. The Zuma Ras Al Khaimah pop-up’s design respects its environment, blending natural elements with modern elegance. Soft ambient lighting, warm wooden accents, and unobtrusive glass walls create a dining space that feels grounded. Plus, there is a sushi counter and robata grill, so you can watch the chefs at work.
Begin on the rooftop and sip on a Chilli & Passion Fruit Margarita (AED 57) while marvelling at the orange dunes, watchtowers and the gazelle roaming the conservation area in Wadi Khadija. When the evening turns shades of pink and the stars scatter across the sky, move into the downstairs restaurant or grab a low-slung seat on the sand.
Zuma’s signature izakaya-style menu has been thoughtfully adapted for this exclusive experience. We begin with a selection of small plates that encapsulate Zuma’s mastery of balance and flavour. The flavour-packed Wagyu Sirloin Tataki (AED 285) remains a firm FACT favourite—its thin slices of wagyu beef offset by the earthy depth of truffle and the bright acidity of ponzu. The Hamachi Usuzukuri (AED 101) is another Zuma classic, plating delicate slithers of yellowtail with pickled garlic, a seductive drizzle of ponzu and fiery green chilli relish.
The robata-grilled Black Cod (AED 248) is a delight. Wrapped in a hoba leaf, it remains an unmissable Zuma staple, its miso glaze caramelised to a smoky sweetness, offering a luscious contrast to the beautiful buttery texture of the fish. Equally impressive is the Spicy Beef Tenderloin (AED 243) with sesame, red chilli and sweet soy, a dish that holds its own even amid the drama of the surroundings.
To finish, Zuma’s Insta-worthy take on a Special Chocolate Fondant (AED 73) is presented ceremoniously to the table with vanilla bean ice cream. Decorated with the instantly recognisable Zuma logo in a golden chocolate font, this decadent dessert reveals an oozing caramel and praline interior when a spoon is sunk inside.
Service, as expected from Zuma, is impeccable. Most staff have been shipped in from seasonal locations such as Mykonos, bringing with them the fastidious finesses associated with a meal at this Japanese juggernaut. And, while signs that this is a temporary pop-up prevail, from the signage to the restaurant setting, it doesn’t detract from the experience.
The modern Japanese izakaya proudly holds the most accolades in the history of the FACT Dining Awards (31 and counting) due to its continued consistency and quality.
